A versatile recipe that can be enjoyed as a Mash and also used (or repurposed) as a Pasta Sauce.
Simmer peas and garlic in chicken stock until stock has reduced by half. Season to taste with salt and pepper. Squeeze in the lemon juice and sprinkle inchopped mint. Blend or mash with a fork.
Place pea mash on plate, top with grilled protein of choice (we love salmon with this).
Alternatively, it can be made into a pasta sauce. Mix in 2 tablespoons of starchy pasta water (reserved from cooking pasta of choice) into the mash. Stir in cooked pasta. Serve alone or with a protein mixed in.
